Yesterday and today I found the sweet spot right at about ~1950 rpms where I can easily maintain 62-65 mph (wind variable) and the I-MPG sits at 55-60. I managed 56.4 mpg with fairly strong crosswinds and annoying traffic.

Yeah,
I have my last tank filled and got 54 MPG
on 2006 HCH.I do my commute in this car with 65% of Highway and 35% downtown.I usually use cruise to drive and I maintain a buffer distance of around 100-75 feet a comfy zone in case u need to step on the brake.From the day one I owned the car I was never below 49 MPG
.I havent changed any tire pressure too.It all comes by itself.
I have my last tank filled and got 54 MPG

Sweetspots: 45 - 53 - 61 stay in cruise on those and car will do the rest. that's on freeway. City? cruise as much as you can, drive decent, DONT ACCELERATE under 4 "dots" and you're safe...

Why have you alighted on the figure of 53mph for the cruise? Was it trial and error , luck , skill or some special inside knowledge. Would a few miles either side make any difference? For example 55 is a nice easy figure to remember.

Also, your lowest listed air temp over all your tanks is 60F. Weather in my area is just getting into the 60's right now.

There is nothing magical about 53 MPH.
It is the slowest speed that I feel safe at.
Also I will add that it is not as slow as it seems since I travel in Los Angeles rush hour traffic.
Occasionally I don't feel safe going 53 so I go faster.
I almost never go in the carpool lane but when I do I go much faster.
Yes I understand I am lucky to have an advantageous commute and climate.
I know I would not be averaging 59.2 MPG if I lived in the mountains or snow.
Everyone needs to move to Southern California.
(Just be sure to buy your house 15 years ago.)

drive like you have to conserve your momentum, and no matter what top speed you pick, you will see a marked improvement even without going to other lengths. Though of course, a lower top speed incurs further imrpovement.
I've tried them all, several times, in various conditions. NOTHING gives a bigger bang for the buck* than simply driving like you don't have brakes (DWB), accelerating gently, and not changing speed once you're at your (reasonable) individual setpoint.
*meaning most gain with least effort...the most efficient way to be more efficient.
