Default HVAC control panel differences

I have the digital panel with a single AC button on it. I see the other panel that has Max AC on it as well, are these able to be switched out and is there any benefit to having the Max AC button?

What year of civic? But in short, no, not really. Max A/C means the vehicle is set to the coldest a/c temperature, the highest fan speed, and the air is on "recirculate" instead of "outside air". Those are all settings you can manually select that will do the same thing.

"Max A/C" is only present on the manual climate control panel in the normal 8th gen Civic. The manual panel is not compatible with the automatic climate system in the hybrid and CSX.
