I know on the 05-07 versions, only the FEH was available with the 110v AC outlet. That was not available on the MMH. Not sure if that is still the case.

That was because the consoles were different, though they looked very similar. On the FE, that front "bin" was removable and therefore one with a 110v outlet could be substituted. On the MM, that front "bin" was not a separate piece. It was part of the entire top of the console. I guess Mercury felt that having to design/stock an entire new top, for just the few MMH that would have the 110v option, just wasn't worth the headaches.

On the 2008, I believe the console is now, design wise, identical between the FE, MM, and MT.

The 08 does have the 110V option & installed on mine. Have not used it yet, but maybe someday when I am using my laptop for a DVD player on a road trip (17" screen) for the kidlets .

One other item I think is a bit odd is there are no wheel choices on the hybrid but there are on the non hybrid versions. (other then aftermarket)

Ah, yes. The "hybrid exclusive" wheels remain unchanged for '08. With that, even the most nieve people can tell you have a hybrid, instead of a gas guzzler, from over a mile away.
