I am engine shopping for my 2007 FEH, am I limited to engines from 2005-2007, or can I use a 2008 engine as well? They seem to be cheaper and more plentiful.

They're not perfect, but if you use car-parts.com and choose "Engine" for 2007 Ford Escape (and then choose the hybrid version when the choice comes up), it only shows engines for 2005-2007. So the implication is "no".

Although the 2005-2007 seem just as common and cheap as the 2008 on that site.
