we know that the escalade is the no:1 stolen vehicle and its brothers tahoe and yukon, does it apply to the hybrid models also? or they are just scared to be fried by the 300v power?

They will have to work twice as hard. The hybrid controller has theft deterrent software running like the engine. So if you try to trick one you may just set off the other.
However, if you have a pre "programmed" key already or a tow truck... you can drive off.
I wonder just how many thefts are "inside" jobs.
