I've seen a bunch of posts about adjusting/eliminating some of the annoying Prius beeps, but have been unable to find any information on lowering the volume on the touchscreen. I like switching back and forth between screens, but when my kid's asleep in the back I'm afraid it'll wake him. Any pointers?

If you have the JBL Stereo the 'beeps' are actually generated in the amplifier. I've heard of people working on a way to eliminate that, but so far I haven't seen anything that does it.

I helped my friend install a new stereo witha computer in his car and cosequently we bypassed the JBL amplifier so now it doesn't beep, but that was unintentional.
